Homemade Mayonnaise Recipe



Homemade MayonnaiseA homemade mayonnaise recipe is a skill that every cook should master.

This basic mayonnaise recipe makes about a cup and a half of mayonnaise, and will keep in the fridge for a week in a tightly sealed container.

Ingredients
2 extra large egg yolks
4 tsp wine vinegar
½ tsp mustard powder
1 tsp crushed garlic
1 tsp salt
crushed black pepper
1 cup sunflower oil
2 tbsp olive oil
2 tbsp lemon juice

Method
Place the egg yolks, 1tsp vinegar, mustard, garlic, salt and pepper into your mixing bowl, and mix well. Add the oil in a thin, steady stream, while beating. Every now and then, stop adding oil but continue to beat, to let the ingredients emulsify. Lastly, beat in the lemon juice and the rest of the vinegar.

Variations

Add any of the following at the end, after adding the lemon juice and vinegar:

  • 1 tsp tomato paste, for a pink mayonnaise
  • 1 tsp grated orange or lemon rind
  • 1 tsp capers
  • 1 tsp stoned and finely chopped black olives
  • 4-5 fresh basil leaves, finely chopped
  • 1 tsp dried tarragon
  • 1-2 mashed anchovies
  • 1 tsp mild curry powder

Tartar Sauce
Finely chop 1-2 pickled gherkins and mix with 2 tsp capers, 2 tbsp chopped fresh parsley, 1 tsp dried tarragon, 1-2 tbsp finely chopped onion, and a few finely chopped green or black olives, and fold into the mayonnaise.
